Coach MarkT's Quinoa Salad

Coach MarkT reveals the "secret sauce" in his delicious and
healthy quinoa salad as he shows how to prepare it:

Qunioa prep:

  • 1 C quinoa, soaked (12-24 hours) and rinsed
  • 2 C water
  • 1/2 t kosher salt


Salad prep:

  • 1/4 t dried oregano
  • 3/4 C tomato
  • 1 C finely diced sweet onion
  • 3/4 C finely chopped celery, internal, tender stalks, including leaves
  • 3/4 C finely chopped carrots
  • 2-3 cloves finely chopped garlic
  • 1/4 C chopped jalapeno pepper
  • 3 T cilantro
  • 1/8 C dried cranberries
  • 1/8 C organic Thompson raisins
  • 1 1/2 T olive oil
  • 1/8 C romano cheese
  • 1T 4% Italian red wine vinegar
  • 1T rice wine vinegar
  • 1T Duke's Mayo
  • spice mix: 1/8  t each of kosher salt, granulated garlic, black pepper, and garam masala
