My move to Florida hasn’t been without food drama. I can’t find a Mexican restaurant that I love, so I’m making Mexican food at home and found this amazing enchilada sauce recipe to make enchilada cassarole! It freezes beautifully and can be made gluten free, which is important in my household. Depending on the chili powder used, it can be very spicy or mild in flavor. The beauty is that you get to choose!

Team MPI Coach Spotlight
Continuing our Coach Spotlight series, this week we sat down with Coach Becky Piper to get to know her a bit. She's fun, engaging, dedicated, and has loads of great life experience to offer.
How long have you been coaching?
I've been coaching endurance sports for 4 years but I've been a personal trainer for 8 years.
What's your favorite pre or post-workout snack?
My favorite post-workout reward is PANCAKES!!! But I only get them if I've done something truly amazing. Luckily, coming back from an injury means I have a good amount of good workouts/races...and therefore, pancakes.
What's your favorite part about coaching?
My favorite part of coaching is seeing an athlete reach a breakthrough and experience the joy that comes with reaching it.
What's a phrase or saying your athletes hear from you a lot?
"That's AWESOME!!!" - I tend to say "awesome" whenever my athletes comment that a workout went well.
What's one question you think athletes should ask before beginning to work with a coach?
I would like all athletes to ask what my coaching philosophy is. I love getting to answer that question because it truly allows me to express my thoughts on why I believe endurance sports can be a joy to train for - for everyone from beginner to elite!
Coach Becky Piper is a USA Triathlon Certified Level 1 Triathlon Coach, Paratriathlon Coach, and Cycling Coach. She is currently on her way to Michigan but has made a little stopover in Wisconsin to see friends and family while her husband Sam is serving in the military. Her dog, Gunner, is with her on the long adventure across the country. She is the reigning national champion in the Time Trial and Road Race in women’s C2 Paracycling and is preparing for her debut in the Paralympic Trials, but her true passion is coaching. For our third and final 2020 #TeamMPILifeChallenge, we bring you the seven-day Movement Challenge that promotes a commitment to move your body consistently for seven days in a row.

Team MPI Thursday Virtual Bike Workouts
Don't use Zwift? Still want to join the online training fun? Don't worry! Coach Becky is hosting a series of Thursday virtual bike workouts just for you!

Time: Zoom starts at 4 pm MDT
There's no need to have a Zwift account for these sweat fest sessions, Coach Becky will be leading some RPE workout sessions (rate of perceived exertion). That means anyone can join!
